Recipe of the Week: Oven Roasted Carrots with a Kick

These carrots are so delicious. You generally don’t think about a hint of spice when it comes to carrots, but I’m telling you… You will love theses!


1 lb carrots, cut on an angle in 1 inch pieces

1 Tbs olive oil

1 clove garlic, minced

Juice of 1/2 lemon

1 pinch of red pepper flakes



Preheat oven to 375 degrees.

Place carrots on rimmed baking sheet.

In small bowl, combine olive oil, garlic, lemon juice and red pepper flakes.

Pour mixture atop carrots and gently toss.

Bake approximately 30 minutes, or until carrots are softened.
